The olive tree is a symbol of the Mediterranean region and can live for several centuries. The 30 hectares of the Valdition olive grove have several varieties that are AOC vallée des Baux : Aglandau, Saloneque, Grossane and Verdale. The estate also has Bouteillan olive trees, a type that is particularly suited to the environment of the Alpilles.
From the tree to the mill...an age-old process
The olives are harvested traditionally by hand using rakes in November and December. There are two harvests per year here at the Domaine de Valdition. The first is an early one, designed to gather the green Bouteillan olives for a single-variety oil with an intense green and fruity flavor. The second is for the AOC Vallée des Baux oil and takes place when the olives are at their ripest.
